With my father being Irish, I learned early on that not every St. Patty’s Day we HAD to have corned beef and cabbage.

In the spirit of the upcoming holiday, I will be posting this recipe along with others to use as alternatives for those of us who aren’t huge fans of the traditional dishes. :)
