The best bites at Maison Kayser are the ones that stay closest to the bread, and the open-faced lunch and dinner tartines are no exception. Here chicken breast joins artichokes, olives, tomatoes, and arugula on a fat slice of a tangy boule. An ample spread of herb mayo becomes the dominant flavor, a sort of Franco-American chicken salad that’s kind to mayo lovers and less amenable to those disinclined. But if you’re up for a mild chicken and creamy spread kind of lunch, this is the way to do chicken salad right. The price is a little steep at $16, but for the portion, and for the Upper East Side, not unreasonable.
